Potato & Bean Stew

with pumpkin- & hemp seeds

FOR 4 SERVINGS
(please try to buy ORGANIC <3)

  • 1 kg of potatoes (hard-boiling)
  • ~500 g of green pole beans
  • 0.8-1 l of organic tomato passata (from DM)
  • 1 tsp Himalayan salt
  • 1 onion
  • 3 cloves of fresh garlic
  • 1 small chilli pepper (who likes)

FOR THE “SPICE BAG”

  • 8 peppercorns
  • 4 juniper berries
  • 1 tsp mustard seed
  • 6 coriander seeds
  • 2-3 bay leaves
  • 1 tsp caraway

INSTRUCTION

  1. wash the potatoes well and dice them (1-2cm)
  2. cut the beans (if necessary)
  3. put them in the pot and fill up with tomato “passata” + a sip of water
  4. bring to a boil (90 ° C), add the spice bag, salt & beans
  5. simmer for about 20 minutes until potatoes & beans are well done
  6. you can add some broth (selfmade, or organic dried one) if you want a stronger taste
  7. just before the end of cooking, add the finely chopped garlic and onion
  8. Turn off the stove and let the pot on it. The day after it’s more tasty (like every stew) 🙂

YOU CAN ADD

  • fresh chervil
  • small cut fennel
  • Pumpkin / sunflower seeds, hemp seeds
  • Hemp / linseed oil (cold pressed, above)
  • toasted garlic bread
  • “Crème fraîche” / soy yoghurt
  • Herb salad with dressing
