SUSHI (Salat) with Quinoa & Amaranth

rich in Magnesium,Calcium, Iron & valuable Protein

compared to the refined white rice,
this version is a true treasure cheast of necessary content 🙂

FOR 4 ROLLS

  • 4 algae leaves (organic)
  • 150 g organic quinoa
  • 75 g of organic millet
  • 75 g organic amaranth

FILLING

  • 1/2-1 organic hass avocado (ripe)
  • 1/2 organic mango (ripe)
  • 1/4 organic cucumber

AS WELL AS..

  • Soy sauce (organic)
  • roasted sesame (organic)
  • roasted, seasoned peanuts & cashews (organic)
  • fresh Turmeric & ginger, chopped (organic)

INSTRUCTION

  1. boil the quinoa, millet and amaranth in 3-4 times the amount of water (~10 min, then let it chill covered; to get it faster you can soak it over night in water already)
  2. cut avocado, mango & other fillings into strips
  3. spread the quinoa-mix on the algae leaves; leave a little margin, press lightly
  4. spread a bunch of avocado & co on top, then roll it all together; moisten the ends with water to make it stick better
  5. slice with a sharp knife in pieces
  6. serve with sesame, ginger, turmeric & soy sauce…
